This week I want to tell you about another one of the awesome shoots we grown here at Rhibafarms, broccoli shoots. Looking at them you would never guess that they are related to the broccoli florets (the things that look like miniature trees) that we all visually associate with the word "Broccoli" but as soon as a broccoli shoot hits your taste buds, you immediately know what it is.
These baby broccoli are light and spindly but more importantly delicious. They are great in a sandwich, salad or a soup like this vegan broccoli and cheese soup we featured on our blog a few weeks ago. Broccoli shoots are juice-able, but due to their size and fragileness we suggest eating them raw. They could be a tasty addition to a spring roll filling.
Broccoli shoots contain more of the cancer fighting photochemical, Sulforaphane, than any other vegetable, including full-grown broccoli. They are rich sources of vitamins A, B, C, E, K, and anti-oxidants. They also contain the minerals calcium, iron, magnesium, phosphorus, potassium, and zinc. They are high in carotene, chlorophyll, amino acids, and trace elements. Broccoli shoots can contain as much as 35% protein.
